Just returned from working the lamb & pork food stand at our local fair....we
had tried a new recipe and I want to share it with you.....
We wanted a "cheap" meal for kids...so we are having a lamb meatball sandwich
(on a hot dog bun) and/or meatballs in a bowl with dipping sauces.
Using fresh ground lamb ($1.89 per pound) along with parmesan cheese, finely
ground cracker crumbs, egg and onion...we mix this together and measure it out
using a level tablespoon of the meat mixture rolled into a ball and then rolled
in the cracker crumbs again....we cooked these in an aluminum foil pan on the
grill (20 minutes) but could be done in an oven....when done we use toothpicks
to serve them and have several dipping sauces to try...and we are selling out!
The sauces are ranch salad dressing, a sweet & sour sauce, a honey mustard sauce
and, of course, a barbecue sauce.
But I think this would work great for a party, too....lots of choices....3
pounds of lamb made almost a 100 meat balls.
