It's my understanding that the laws on this vary from state to state.
Where I live I cannot sell rabbit meat that I have butchered myself. It
has to be processed at an approved abbatoir. Some folks get around that
by selling live rabbits and then giving butchering "lessons" to their
customers on the premises. Obviously the "student" should be present
for the lesson but I don't think that always happens. Also, rabbit meat
is bartered between folks that know one another. But if a person wanted
to sell to a store or restaurant they would have to use an approved
facility.
There are no approved facilities in my state... or if there are, they
don't do rabbits. The code where I live says that when a processing
plant switches between animals - from chickens
to rabbits, for example -
they must shut everything down, clean it all up, and sanitize it. There
is not enough demand for rabbit processing to make it worth the down
time required to switch over to rabbits and back to something else.
So, for me, no selling to commercial customers.
You might check with Pel-Freeze; I think they buy live rabbits and do
the processing themselves. I could be mistaken about this but it's
worth looking into.
