Is that the only time she nips?
Nipping through cage bars is a pretty common occurrence.
It's one of the easiest behaviors to accidentally train into a rat. Most of the
time, it's an attempt to snatch a treat. Some times, it's a ploy for attention
gone awry.
Rat vision, especially PEW, is terrible. If they get treats through the cage
bars, they'll snatch at anything, thinking it's some tasty morsel. She won't
realize it's your hand until too late. It's not aggression, just an oops moment.
Try acclimating her to being fed only through the door. Eventually, she'll
realize that food doesn't come through the bars. It comes through the door, and
there is plenty of space to tell the difference between your hand and the treat.
Even with out food, some does have a grabby nature. Some of my ladies grab my
hand firmly, but gently in their teeth and try to tow me in when they want my
undivided attention. It would hurt through cage bars, but with an open door, my
hand doesn't get stuck, and they have no motivation to try pulling it through.
